Restaurant Gotoken is a living piece of Japanese culinary history, one of the country's oldest Western-style restaurants, founded in Hakodate in 1879. As a treaty port opened to foreign trade in 1859, Hakodate was one of the first places in Japan to absorb Western food, fashion and architecture, and Gotoken grew out of that cosmopolitan moment. More than a century and a half later it still serves the yoshoku — Japanese-adapted Western cuisine — that the city helped pioneer.

The restaurant's most famous dish is its curry, and its story explains a lot about Japanese food. Curry reached Japan not from India but via the British navy, arriving as a thick, mild, European-style stew, and Gotoken was among the earliest establishments to put it on a Japanese menu. Its beef curry remains gentler and more old-fashioned than the sweeter, punchier curries common across Japan today — a rich brown sauce, slow-cooked and refined, poured over rice or served with tender beef. Eating it is like tasting an earlier chapter of the dish's long naturalisation in Japan.

Beyond the curry, the menu carries the classics of the yoshoku tradition: beef stew, hayashi rice, croquettes, cutlets and other dishes that Japan borrowed from the West and made its own. The cooking is comforting and unshowy, rooted in recipes handed down through generations of the same restaurant.
