Kaki Goya Sendai Ko (Sendai Port Oyster Shack)

Kaki Goya Sendai Ko is a seasonal oyster shack near Sendai Port where, in the cold months, you grill unlimited fresh Miyagi oysters in the shell over your own brazier. It is a boisterous, hands-on, quintessentially Tohoku winter experience, and one of the best ways for a visitor to feast on the region's most famous shellfish at its peak.

Miyagi Prefecture is one of Japan's great oyster-producing regions. The nutrient-rich waters where mountain rivers meet the Pacific along the Sanriku coast and in Matsushima Bay yield oysters that are plump, briny and intensely flavored, and locals prize them so highly that most are eaten close to the source. A kaki-goya, literally 'oyster hut,' is the classic way to enjoy them: a no-frills seasonal shack set up during oyster season where you sit at a grill and cook the shellfish yourself.

The format is the heart of the appeal. You typically pay for an all-you-can-eat plan within a set time limit, and staff bring buckets of whole oysters in the shell that you arrange over the hot charcoal or gas grill in front of you. As they cook, the shells pop open and the oysters steam in their own liquor; you pry them the rest of the way, and eat them piping hot, smoky and sweet, straight off the fire. Part of the fun is the technique, learning to shuck efficiently and judge when each oyster is perfectly done, and the communal, slightly messy energy of a table full of people grilling and eating as fast as they can. Simple condiments such as soy sauce, ponzu or lemon are usually on hand, but truly fresh oysters need little.

This is rustic, casual dining rather than a refined restaurant. Expect plain benches, plenty of smoke, gloves and shucking tools, and an atmosphere that is loud and cheerful. Wear clothes you do not mind smelling of charcoal afterward. Because it is enormously popular in peak winter and operates only seasonally, reservations are strongly recommended for weekends, and you should always confirm the current operating dates and hours before making the trip, as they shift each year with the harvest.

The season is the whole point: Miyagi's oysters are at their best roughly from autumn through late winter, generally around October to March, and that is when these shacks open. A cold day and a hot grill of steaming oysters is one of the great seasonal pleasures of the Sendai coast; outside that window the shack is closed, so this is a winter-specific outing.

Getting there takes a little more effort than the in-town spots, which is part of why it feels like an adventure. From Sendai Station, ride the JR Senseki Line to Rikuzen-Takasago Station, which is covered by a Japan Rail Pass, then continue toward the Sendai Port and Gamo harbor area by taxi or local bus, as the shack is a bit far to walk comfortably. If you would rather not travel out to the port, similar oyster-shack experiences run seasonally in nearby Matsushima, but for an all-you-can-grill oyster feast close to the city, the Sendai Port shacks deliver the goods.
