The brewery's calling card is its water. Hakodate Beer is made with water drawn from the slopes of Mount Hakodate, the mountain that towers over the city, and the brewers make much of this local, mineral-clean source. The house range typically covers the German-inspired styles that anchored Japan's early craft scene — a crisp pale ale or Kölsch-style, an amber ale, a dark beer and a wheat beer or seasonal special — and a tasting flight is the best way to work through them. The beers are clean, approachable and well suited to food rather than showy, in keeping with the brewpub's easygoing character.

The kitchen leans hard on regional ingredients, which is the real joy of eating here. Expect Hakodate's famous seafood — squid, scallops, crab and fresh fish — alongside Hokkaido specialties like jingisukan (grilled lamb) and local sausages, all designed to pair with the house beer. Beers are modestly priced and meals are flexible, making it good value for a laid-back dinner or a mid-sightseeing break. The brewpub typically closes on Wednesdays and breaks between lunch and dinner service, so check the hours if you are planning around it.
